If you enjoyed the recent episode on cast netting for crawdads (episode #67), Mike & Valerie from Southern Arkansas called to share a cooking tip they use. Mike told me that soaking your crawdads in salt water causes them to expell the contents in their stomach and the "mud vein", providing a cleaner and tastier eating experience. Valerie advised using 1 pound of salt to 50 lbs. of crayfish (they use a childrens wading pool just like we did). Soak them for an hour, rinse in clean water, repeat in salt water for another hour, and then one final fresh water rinse. Mike also says that the seasoning we used can be left in the bag as it is perforated and you don't get all the seasonings all over your food. I can't wait to catch some more crawdads and try it out! It's true, a Leopard was shot by a women in her backyard in Southern Indiana! She and her boyfriend thought a bobcat was killing their cats and dogs, so they stayed up one night and shot the predator. It turned out to be a 90 pound leopard. Our IOA Pro Staffer, Bo Spainhour, was the conservation officer to receive the call and retrieve the animal. It is not native to the United States, let alone Indiana. The DNR is still investigating where it came from and how it escaped.
